Easy Lemony Lemon Cake
I am fed up with all the crap that is filled in food marketed towards children. I make James’ lunch for school each day and he wants things like Twinkees, Pecan Swirls or Ho-Ho’s. James is a lover of all things sweet.
I’ve decided that since he does need some kind of snack in his lunch each day I will be the one to make it. So I junked the Little Debbie’s and Hostess for homemade cakes. I was light on a few ingredients so I had to settle for making him cupcakes from a box. I used Betty Crocker Lemon cake mix. I used my favorite cream cheese frosting recipe and froze the cupcakes after frosting them. Each morning I pull one out and place it in his lunch box. When he gets home from school I take two more out for him and Vanessa to have for snack and the story repeats itself the next morning.
I’m going to make a Red Velvet cake next. He loved the Blue Velvet one I made for his birthday and I feel better about making desserts from scratch. For the lemon cake, one thing I deviate from is where the recipe calls for 1 1/4 cups water, I use 1/2 cup lemon juice and 3/4 cup of water. I don’t use fresh lemon juice because I’m not sure how it will turn out but I know the RealLemon juice works great. If you try it let me know.
